Whether you’re working out of a trailer or a pop-up tent, how you set up your space can make or break your weekend.

Pack Light vs. Pack Everything
There are two schools of thought:
- Pack only what you need (light, tight and efficient)
- Pack it all just in case (a.k.a. the “kitchen sink” method)
If you’re rolling in a full-blown trailer, it’s easier to bring extras. But if you’re working out of your truck with a pop-up tent, overpacking can be a real hassle.
Layout Basics: Divide and Conquer
Break your site into sections:
- Grill Zone – For smokers, charcoal, wood, lighters, fire starters, grill brushes, gloves and a fire extinguisher.
- Tent Setup – Don’t forget tent weights. Wind can turn tents into flying projectiles. Tie them down with coolers, water jugs or your truck.
- Cooking & Prep Area – Use tables for your knives, cutting boards, spices and glazes. Elevate them with PVC pipes to save your back.
- Cleaning Station – Set up a three-tub system: soap water, rinse water and bleach water. Keep this on a separate table from food prep.
- Public Area – Have a clean, friendly space for chatting with fellow competitors or curious spectators. Bonus points for adding a branded banner.
Spice Bin Hack
Use individual bins for each meat category (chicken, ribs, pork, brisket). Keep rubs, injections and glazes together by protein. You’ll save time and avoid chaos during crunch time.
Comfort Counts
You’ll be on-site for hours, maybe overnight. Bring chairs, TV trays and snacks. Gravity chairs are a great call if you’re sleeping at the comp. Consider a second tent for sleeping if space allows.

- Trim Meat in Advance: KCBS rules allow pre-trimmed meat. Do it at home to reduce mess on-site.
- Weather Watch: Check wind direction and adjust your setup to shield your grills.
- Double Your Gear: Keep a separate competition kit so you’re not packing/unpacking from your home kitchen every time.
Tear-Down Strategy
Stick to your setup plan in reverse. Follow comp rules for dumping ash, trash and gray water. And take note. If something stayed in the bin all weekend, maybe you don’t need to pack it next time.
